Vanilla Slice, Easy to make and YUMMY

[color=red]Ingredients[/color]
• 2 x 200g packets Arnott’s Lattice biscuits
• 1 cup milk
• 2 cups thickened cream
• 1/3 cup cornflour
• 1/3 cup custard powder
• 3/4 cup caster sugar
• 2 egg yolks
• 2 tsps vanilla essence
[color=red]Passionfruit Icing[/color]
• 1/4 cup passionfruit pulp
• 23/4 cups icing sugar mixture
[color=red]Method[/color]
1 Grease a 19 x 30cm lamington pan. Line base and sides with baking paper, extending paper 5cm above edges of pan. Line base with half the biscuits, trimming to fit.
2 Place milk and cream in a medium saucepan. Bring to boil. Remove from heat.
3 Combine cornflour, custard powder and sugar in a heatproof medium bowl. Slowly whisk in hot milk mixture. Return mixture to same saucepan.
4 Cook, whisking over a medium heat, for about 5 minutes, or until boiling and thickened. Remove from heat. Stand for 10 minutes to cool slightly. Stir in yolks and essence. Spread over biscuits in pan. Top with remaining biscuits. Refrigerate overnight, or until set.
5 To make passionfruit icing, combine both ingredients in a bowl. Stir until smooth.
6 Lift slice from pan and place on a chopping board. Using a hot knife, spread icing evenly over top. Refrigerate until icing is set.
7 Once set, cut slice into squares and serve.

Nearly fell of my chair laughing at that. You and me both!

It sounds good, but there is an easier one still.

The same lattice biscuits, laid out the same.

600 mls cream

white wings vanilla instant pudding mix

mix cream and pudding mix together, spread over layer of biscuits, top with another lot of lattice biscuits and yummy yummy easy as.

Oh yeah...........:) I will have two of each please but not to eat all in one go just some to save :) and I better share with Peter as he is finding it difficult to breath today so that will cheer him up .

Seggie.  Hope the skirt in my  new suit has room to let the side seams out. Am going to try both recipes later after I've eaten my chocolate coated icecream. We 'girls' must have our sweets.

Yum, yes the vanilla slice is always a goer, I use to make them regularly but now that we are Darby  & Joan (and of course the dog), I don't seem to do these things anymore.  Trying these recipes might make me get my butt into gear again. Thanks girls.
