Vanilla Slice, Easy to make and YUMMY

[color=red]Ingredients[/color]
• 2 x 200g packets Arnott’s Lattice biscuits
• 1 cup milk
• 2 cups thickened cream
• 1/3 cup cornflour
• 1/3 cup custard powder
• 3/4 cup caster sugar
• 2 egg yolks
• 2 tsps vanilla essence
[color=red]Passionfruit Icing[/color]
• 1/4 cup passionfruit pulp
• 23/4 cups icing sugar mixture
[color=red]Method[/color]
1 Grease a 19 x 30cm lamington pan. Line base and sides with baking paper, extending paper 5cm above edges of pan. Line base with half the biscuits, trimming to fit.
2 Place milk and cream in a medium saucepan. Bring to boil. Remove from heat.
3 Combine cornflour, custard powder and sugar in a heatproof medium bowl. Slowly whisk in hot milk mixture. Return mixture to same saucepan.
4 Cook, whisking over a medium heat, for about 5 minutes, or until boiling and thickened. Remove from heat. Stand for 10 minutes to cool slightly. Stir in yolks and essence. Spread over biscuits in pan. Top with remaining biscuits. Refrigerate overnight, or until set.
5 To make passionfruit icing, combine both ingredients in a bowl. Stir until smooth.
6 Lift slice from pan and place on a chopping board. Using a hot knife, spread icing evenly over top. Refrigerate until icing is set.
7 Once set, cut slice into squares and serve.
