Stewed fruit desert

i'm not too good at making deserts, but this is really easy and will keep in the fridge for months.  healthy too.  whenever i serve it to friends they rave about it and ask for the recipe, so here it is:

rinse about 8 dried prunes, 6 dried apricots, 3 dried figs and a small amount of sultanas or currents.  (i like to cut up the apricots & figs into smaller pieces).
put into saucepan with cold water to cover.
add two cardamon pods (or, if you prefer, use one star anise, or a few cloves - whichever flavour you like best).
add three thin slices of lemon/lime cut into quarters plus zest of about half the lime skin.

gently heat the saucepan until water just simmers.  turn off heat and allow to cool.  (no need to boil contents).

add some chopped nuts (i prefer macadamias) for crunch.
you can add peeled, chopped apple as well if you want more crunch.  (or add apple at start if you prefer it stewed and soft).

add one can of lychees (or whatever can of fruit you like) along with all the juice.
if you want more juice, add a bit of water.

no need to add any sugar as there's plenty in the fruit.

this will keep in the refrigerator for months - delicious with just yoghurt or, for treating yourself, some maggie beer ice-cream and creamfraishe.  yummy!

forgot this ingredient, although not essential - i like to add some finely chopped crystalized ginger to the mix, just a small amount tastes good.

Sounds lovely Kiki. Will try it for sure.

Sounds Yummy !!!

I'm game!

forum taken over by fake passport posts so bumping to displace them off front page

good move gerry.

remembered something else about my stewed fruit desert - its great in winter too.  just warm it slightly after adding cinnamon and cloves.  luscious with custard, cream and ice-cream for a special indulgence.

Somehow I do not think it would fit my post Christmas Fast  Day diet but might be OK on the other 5 days :)

8 dried prunes ..... 160 cals

6 dried apricots....   96 cals

3 dried figs..........  141 cals

1 cup Custard.....   232 cals

Total Calories ......  529 cals

It actually would be a very good cleansing diet if one was to put the fruits onto porridege with the high fibre content.

The real advantage I can see of this recipe is that you can have the dried fruits on hand and if unexpected guests arrive you can whip up a rather delicious sweet in no time especially with custard cream and ice-cream.
