Spicy Plum Sauce

SPICY PLUM SAUCE

Ingredients

1 kg fresh plums, pitted and quartered      1 small onion
1 peeled garlic clove                                       2 cups sugar
1 cup cider vinegar                                         1 tbsp ground ginger
1 tsp ground cinnamon                                  1  tsp mixed spice   

1 tsp chilli flakes


Method

Process the plums, onion and garlic in a food processor.

Transfer to heavy based saucepan. Stir in the remaining ingredients. Bring to the boil. Reduce heat and gently simmer for an hour or until reduced by half.

Cool then ladle into sterilized jars.(I don't cool mine, I bottle hot into hot bottles.)

I preserve mine by placing jars in the oven, temp 100C for 15 mins. Ladle into jars and seal each one immediately.

One thing is I only put 1/2 teaspoon of chilli flakes in mine as chilli flakes can be very hot. Well mine can because I dry my own and I use Birdseye Chillies and leave all the seeds in.

Did you see my post in "Today" thread Sandi? Made the plum sauce..lovely and so morish. Unfortunately I only had three empty jars left for storage but I have no doubt the rest will be scoffed over the weekend !

No didn't Fleur, so went and read it.  Yes I think it's the nicest recipe I've had.

I made a different one today.  It's an Asian one, haven't made up my mind about it yet and as it has less ingredients in it didn't keep doing the taste test as I needed every bit to put in the jars I had.

Will let you know how this one turns out.   I only make again if I get the nod from the three mouseketeers, Jenny, Lynley & Cath - Jenny's friends.  You see, whatever I make has to go around.

Will be needing to think about what Vonny will want as she's coming home from China in March for a holiday and she always takes stuff backQuince Paste is always first on the list.

Would I make them? well er maybe I am a "lazy lump" :( but would love it if you serve me some please. lol

Sandi...I've only had quince paste with cheese and crackers or panini...any other way to eat it??

That's all we use it for Fleur.  Have been thinking that I could make it a bit thinner and putting it through Ice Cream when I make it.

Would be nice on scones with cream  too I think.

You can buy/make quince jam.

Wish everyone was closer as this year I have a bumper crop of quinces and most people don't like them.  I stew them up for desserts, make pies.

Whilst out I bought another 4 kg of plums to make some more.  Plus 2 kgs of  Roma tomatoes to make into Pasta Sauce for winter.

Prefer the Romas for preserving, they are a richer flavour but they have been very expensive here this year.  First time I have seen them this summer under $ 8.00 kg.

Sandi...plum sauce a great success!!! Three people asked for a little to take home...good thing I hid the three jars I'm saving or that would have been demolished too!

Three jars won't last you long Fleur.  I'm making my third lot already.  Jenny's friends have already put in their orders.

Try making Pork Spare Ribs or Beef Spare Ribs or Chicken Wings & Drumsticks.  Cooked on the BBQ or in the oven are lovely.

Alternatively you can buy the plums, de-seed them, pack in containers in the freezer and just make it as you need it or when you have the time.  I do that quite often if I don't have the time to make something.

I've got chicken wings..good idea for dinner Sandi! I'm just about to make some pineapple and cranberry tarts for hubs...his favourite. Goodness...this domestication is going to kill me...loving it though!
