Sandy's Favourite Versatile Mango Salad
[b][color=blue]SANDY’S FAVOURITE, VERSATILE SALAD.[/color]
½ Large PaPaw (I prefer the Strawberry one as it’s a bit sweeter)
½ Lebanese Cucumber, sliced (you can leave the skin on or take off)
½ Spanish onion, sliced thinly.
½ cup fresh Coriander
¼ chopped nuts, macadamias,cashews or almonds or whatever you fancy.
[color=red]Now here’s the fun bit. You can add or delete whatever you like to change this recipe around.[/color]
I use ¼ piece of the Papaw and use a whole mango. I also add Avocado pieces. You can add cherry Tomatoes, Mixed or Iceberg lettuce, Bean Shoots, Any kind of sprouts. I also put in Fetta Cheese or Camembert or Brie, but you can use any you like. You could put hardboiled eggs in. I’ve even put in slices of Orange (no skin) or Apple, Pineapple.
Now to change this from just a salad to an entire meal just add one of the following ingredients or more if you like.
Prawns, Crab, Chicken, Crayfish (if you’re rich), Steak/Lamb grilled and cut into slices, Seafood extender (not for me, but I know some like it) Fish or Anchovies. It’s only limited by your imagination.
1 Chilli, finely sliced 1 teas. Fish Sauce 1 Tab. Rice Wine Vinegar
Grated zest of 1 Lime Juice of one Lime 1 Tab.finely chopped Lemongrass
If no Lime substitute Lemon.
Put all Dressing ingredients into a jar and give a good shake.[/b]
[b]Put all the salad ingredients into a bowl [color=red]except the Coriander and Nuts[/color], and chill until one hour before serving. Shake and put the dressing over, seal bowl and just before serving add the Coriander and Nuts.
You can try different dressings over. One I make is half Olive Oil, half White Balsamic. I also make one with half Red Ochre Wild Lime and Chilli Sauce or
Red Ochre Sweet Lemon Myrtle and Chilli Sauce with half Olive Oil. Again only limited by your own imagination. Try your favourite Dressing.[/b]
