Ricotta Cheese Pancakes
RICOTTA PANCAKES.
Ingredients
4 Eggs
175 mils milk
250 grms Ricotta Cheese (preferably smooth but not essential)
100 grms Plain Flour
1 teasp. Baking Powder
Method.
Separate Eggs. Whisk Egg whites till slightly firm .
Sift Flour, Baking Powder together into bowl.
In separate bowl mix egg yolks, milk and ricotta. Then mix the flour
into the yolks mixture until combined.
Then fold one large spoonful of the whites into the mix and blend/fold lightly.
Then mix in the rest of the egg whites being careful to blend/fold lightly to keep the mixture light and fluffy.
Cook as for normal pancakes.
Then I put fresh berries on top with either cream or Yoghurt.
Note 1. Don't put too much mixture in the pan because if you make them too big they are hard to turn over.
Note 2
To make a nice topping, before you make the mix put strawberries, orange juice and some sugar in a bowl to soak. You could also add a liqueur like Grand Marnier or Cointreau for adult pancakes.
