Pineapple & Carrot Cake

1 cup plain flour
1 teaspoon baking powder
3/4 teaspoon bicarbonate soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon or mixed spice
1/2 cup raw sugar
1 large cup grated carrot
1/2 of 400g crushed or finely chopped pineapple
1/4 cup walnuts (I leave out )
1/2 cup sultanas
2 eggs
5 tablespoon oil ( I use olive oil)


Sift the dry ingredients into a mixing bowl and mix lightly but well
Add raw sugar,carrots,sultanas ,nuts then beaten eggs and oil and stir until well combined

bake in moderate oven 180c or (350F) for 35 to 40 minutes
when cool,ice with lemon cream frosting if desired
I don't ice it theyre nice without it

I take them on bus trips for morning tea and they go in a flash

yes PLan B it wasn't till I sent it that saw I have forgoten to add pineapple,these things do happen,

A number of club members have asked for the receipe,I make them in tray of oblong patty tins 3 1/2 inches by 2 1/2 inches 1 1/2 inches deep

It makes about eleven or twelve,when you make them oil the tiins well,I use olive oil in the cakes and the tins

Jessej, Do you use tinned pineapple and do you drain it before adding to mix? sounds realy yummy.Wobbly.

Wobbly yes use tin crushed pineapple the one in syrup is better,spoon out half of the tin with juice, when cooked they feel heavy when you take them out of the tins and they shrink a little
