Pineapple & Carrot Cake
1 cup plain flour
1 teaspoon baking powder
3/4 teaspoon bicarbonate soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon or mixed spice
1/2 cup raw sugar
1 large cup grated carrot
1/2 of 400g crushed or finely chopped pineapple
1/4 cup walnuts (I leave out )
1/2 cup sultanas
2 eggs
5 tablespoon oil ( I use olive oil)
Sift the dry ingredients into a mixing bowl and mix lightly but well
Add raw sugar,carrots,sultanas ,nuts then beaten eggs and oil and stir until well combined
bake in moderate oven 180c or (350F) for 35 to 40 minutes
when cool,ice with lemon cream frosting if desired
I don't ice it theyre nice without it
I take them on bus trips for morning tea and they go in a flash
