Old chook - or chicken?
I know I grew chickens for quite a few years. I also had the old faithful older chooks for laying eggs. The chickens were small - made sweet succulent meat. The older chooks made edible meat, but it was just that little bit tougher. Looking at chicken meat now, in the supermarkets, I would say it was chook meat. Maybe the two year, or older laying hens? Just heard again that I can get goat meat - haven't had that for a while. Nothing older than twelve months old. It really is a good meat, not much fat, and better protein than lamb or beef. Sure it is a bit more expensive, but good food, is good food..
Inghams Chicken Factory has burnt to the ground here in Victoria Bev. so any age chook will be welcome down here now, but I think you are right re older fowls being used for chicken fillets which we use a fair bit and in fact roasting ones also.
It has been a lot cooler here today. I rather like the warm weather (not 40deg. though) so was a tad
