Mila's Cheesy Meatballs

About Seniors subscriber, Mila has a great recipe for Cheesy Meatballs, perfect for using up your kitchen leftovers.

Ingredients
1 egg
150g of bacon pieces or leftover chicken, beef, lamb, etc.
2 cups of your favourite cheese (this can be a mixture of what you have in your fridge, i.e. parmesan, cheddar, etc
½ cup of milk
1 cup self-raising flour
2 medium onions, chopped (can be mixed with spring onions if preferred)
1 teaspoon of your choice of mustard
handful of parsley, chopped

Method
1. Beat the egg and mix all ingredients together
2. Take a tablespoon of mixture and roll into a ball. Repeat until all mixture is used.
3. Place on a baking tray in a preheated oven at 2000C and bake for 10 minutes or until lightly browned.

Serve with side dish or your choice, pasta, rice potato, or just some sauce to dip.

I bet they would be very yummy but an awful lot of cheese when many are watching cholesterol levels! I am going to make them with a cup of seasoned breadcrumbs and one cup of cheese :) I will let you know how they turn out for anyone interested.
