I think I can call this one Phyl's :)

I was making my usual once a week low calorie apple sponge cake  for lunch with  low fat ice cream me, and low fat cream for Peter (not that he would not be even happier with full cream) lol and stumbled across (because I had 'round aboutish a scant 3/4 cup of full cream Yoghurt needing to be used up).

After putting sweetened cooked apples in the bottom of the cake tin (I use a springform with cake size Patty Pan inside - have you seen these? really good and btw I use two, one inside the other for a bit better strength) but any cake pan would do and no real need for the Patty Pans.

I then whisk two large eggs or 3 small with a bit of sweetener to your taste with 3/4 cup of self raising flour and the yoghurt. Cook, test with skewer and I tell you all, it is THE yummiest apple cake I have ever made - still low calorie and low fat. SO easy peasy.

I will accept all your accolades - money and gifts for sharing :) because it is just SO SO exciting (I know I know does not take much for me to be excited about) lol

I bought some dollar bills of Zapot

So I hope you accept them as a gift for sharing such a delicious healthy cake with us.

Thanks (I think) Abby those notes look real but Zapot sold them to you? I think he might make them in an almost concealed room so I would be a bit to afraid to actually spend them. Make that cake and you will see how good it is. :)

Now could you please give the low-fat icream recipe? :-)

Of course Twila : SO easy just put a tin of thickened light cream into a dish and mix in tin light sweetened condensed milk and add a couple of splashes of Vanilla and let set in freezer until firm around the sides and starting to set in the centre.

Whisk and whisk it and walla an easy to make light ice cream after it is set.

Bulla make a good one ,  which is 98% fat free and low cals. also, if in a hurry.
