Hi Daisy,I have never done any house sitting but I belong to a motorhome club the CMCA .They put out a monthly magazine where people advertise for sitters  and house sitters advertise ,their availiability. Have you considered house swapping,this is another aspect you may wish to consider if you wish to see more of Australia.You can Google the caravan and motorhome association of Australia for more information.
