Why are my frozen Hoki fish so waterloged when thawed?

I love Hoki John....Its my favourite fish of all time,being introduced to it on my trip to Newzealand. 

The Hoki there was sprawled across a large dish and one large piece was enough for 4 people. I have never come across anything in Australia to compare, and its not for the lack of trying. 

I too have found the waterlogged and somewhat soggy offerings from the freezer, so now I have to be satisfied with the chunky new Hoki fishfingers until I can once more sail to Newzealand shores to get the authentic fish.  


Thanks cranky,The frozen fish i brought tasted ok but was so full of water. I got some more this morning and will see how they thaw out.  I am trying to make the switch from meat to fish but fresh fish is so expensive i will go frozen,  thanks for your comment,  and hope you get back to N/Z soon.

Frozen Hoki is not the only fish that has a lot of water.Frozen fish can dehydrate quickly so manufacturers use an ice glaze to protect from freezer burn. Best to thaw the fish first in the fridge in a colander then when ready to cook, pat dry with paper towels.

the water probably costs more than the fish meat itself 

I really felt like Fish for my evening meal tonight so I went to the local fish monger and bought boneless Flathead, 3 small filets. When I decided to start getting them ready just a while ago, I took a good sniff of them and it was disgusting, they smelled like they were last weeks fish. I just wrapped them in the paper and tossed them in the bin, they cost me $6.50. I have decided to make Salmon Fish Cakes out of the tin. Geez I hate waste. It's no use taking them back as they would deny me a refund.

Gee HOLA there is NO way I would not have taken that fish back -- I always looked at the fish b4 I bought and see if its eyes were bright and the colour of the gills.

I love flathead, when i was younger we would catch lots every weekend almost, Now to buy in my state they are about $45 48 a liko,more at easter.  I just wonder Hola if the fish mongers refreeze their fish,  even on the boats when first caugut most fish are put in an icey slurry, they freeze of course so thats once.then may be the shops freeze them again, then we freeze some again, Just wondering.cause we would never no would we.

 

Johnboy - These filets were all in the window, but I got a little suspicious when he took the 3 closest to him, I think they put the fresh ones to the front of the window. It was all Australian fish. But I have learnt my lesson, I will now sniff and buy. 

 

I read that if you cook the fish frozen and strain off the water as it dissolves.

Myself I buy my fish from Woolies and it is always good ...do not know if it is fresh or thawed?

Woolies is the only place I buy my fresh prawns too Suze. We are very lucky to have a big fish market at Scarborough, and often take a trip down to stock up.. 

You have to be so careful with absolutely every piece of fish you purchase now.

That must be the Mick Jagger flathead fish.

So much of the fish is imported or caught here and sent over to Thailand to be cleaned and sent back -- they reckon it is cheaper to do it that way -- they were doing that with lovely fresh Tassie fish --and some others, it was on Landline

Thats the way Hola,  I thawed out some more hoki overnight this time and they dont look to have as much water in them this time,  I go to a small market on saterday mornings and people are lined up ever where to buy fish ,and its so expensive.  OK if you have the money.but if they would only drop the price i think more people would buy it and they would still make a big $$$$.

Why buy fish when you can get it for free?

why buy frozen fish at all?   i would never buy it frozen,   no idea how old it would be,    HOLA,   you should have gone back for a refund,   aslong as you have your docket they should refund,     you cant keep rotten fish to take back,     only have to tell them iy was off,    you will get your money back,   i only bought that HOKI once,    worse fish i had tasted,   i would never buy it again,      i like a BARAMUNDI,   or BLUE GRENDADIER,     

The reason i buy frozen  and not fresh is the price,And just how fresh is fresh fillets any way?How can we tell how old the fillets are and weather or not they have been frozen.I like salt water fish not freshwater fish as well, I think the salmon tastes like dirty water can't see what all the hipe is about exept for the omega 3 oil maybe.Every time i open a tin of tuna i think of dulfins?  I think i will go back and look at prices again though because meat is expencive now as well and we do eat meat almost every day, that is why we thought we would try fish for a while.  PS does this thing have a spell check on it ,my spelling is not that good   sorry.

When my son comes up to Sydney he refuses to go to the local fish shop. Last week he felt like some Blue Swimmer Crabs so he caught the train into Central (a 15k trip) and walked down to the Fish Markets. He reckons they are the best fish in Australia. He bought some beautiful filets of Salmon and baked them for me. What a wonderful Dinner that night. 

And what a wonderful son HOLA.

johnboy - You're right there. He's coming back to Sydney for work next week and I'll be looking forward to some good fish meals again. 

We dont have a fish market where i live in Tas, We have lots of beautiful fish being caught here but most end up in the sydney fish market lol,
