Fried Rice. Att:- kfchugo

I have cooked a pot of boiled rice now what do I do to make it separate and how do I fry it please?
Must be my heart all of a flutter as I have forgotten how I did it when it came out perfek :)
I have done fried rice a few times since but never as good as when you Tony said exactly how to.
Sorry to be a nuisance.

I think I spread it on a big tray and separate the grains and freeze yes? Then the hot oil with all the bits and pieces in the wok?
Will wait by the gate.

I have it on a big tray separated but in the fridge rather than what I was thinking of doing in the freezer.

I was getting VERY cold at the gate waiting :( as the fog is still hanging around here.

Has anyone tried the green tea coffee blend mixture? Get sick of buying things are really yuk.

Hi Phyl, sorry....... I just saw your post. Anyway, for next time if you still want it.......have plenty of boiling salted water ready and dump in your rice ( I throw in about a cup and a half) stir immediately as it returns to the boil or rice will "clump"...... the boiling action will then keep it separated, but stir now and then just to be sure. Reduce heat so that rice is just boiling steadily.

Boil rice for no less than 12 mins and no more than 15 mins....... when ready, turn off heat and pour in some cold water to take immediately off the boil, then strain through a colander. After the rice has stood for 15 mins or so in the colander it can be transferred to a tray and spread out to dry. Leave in the frig for at least a few hours (or overnight) and the rice will be well separated and ready to be "fried".

It sounds like you have a good chinese cookbook, so any decent recipe will do.......

I waited and waited at the gate for you kfc but you did not show.

I actually did do that and it turned out o.k. but I honestly do not think I will ever be an expert fried rice cooker and think I should stick to buying the stuff at the supermarket already in packets. I can get it past the boiled rice and fridge and separating o.k. but is it real fried rice? nah not really!! ok-ish though, but not wonderful. lol

Phyl, I usually fry a couple of beaten eggs in the wok first, then remove and dice the resulting omelette. I then fry bacon, diced onion, diced carrot, capsicum, celery etc....... when everything is cooked, I add about a dessertspoonful each of oyster sauce and soy sauce. Now,y ou are almost done......THEN add your cooked rice, egg, plenty of chopped shallots and anything else you like...( I often throw in some cooked prawns and diced cooked chicken. Salt and pepper to taste and you are there....... The rice is already cooked, so you just need to lightly fry to heat.

You can experiment with the seasonings.....e.g., you may like more or less of the soy and oyster sauce........Authentic chinese fried rice has a fair amount of oil in it.....it should "glisten". I dont do that for health reasons and use the sauces to keep it moist. Its pretty tasty and also not high in fat.

Sounds very good to me kfc. Will do exactly as you wrote it for dinner this eve.

Strangely enough now I think of it when we had our takeaway and cafe at Noojee Peter cooked chickens by the hundred on the rote and also fish and chips and all the things go with a take away and made sandwiches too many to ever count etc. What happened? He must have become lazy lol. I must get onto him about leaving all the cooking to me and saying "I cannot cook" I have fallen for all that for years. Silly me......He is SO cute I forgive him :)
