Fried Chicken recipe needed

Do any readers have a good recipe for fried chicken, as in Kentucky Fried Chicken?
I got one from the telly but it was so hot it melted the wax in our ears!

Hi Ernie. I mix ordinary Aldi breadcrumbs with Aldi chicken noodle soup

and after dunking any part of the chicken you want to coat in beaten egg

coat with the breadcrumbchickensoup mixture and fry in Olive Oil

but I am sure you know :) have to cook the chicken first unless you use

a really big pot of oil otherwise you can get very sick from chicken not

really well cooked. I cook my chicken breasts or chicken drumsticks

in the morning and refrigerate ready for coating and shallow frying

in the evening. Really tasty...

hi ernie, please use chicken thighs,,..in a plastic bag,put 1 cup of cornflour,1 teaspoon of masterfoods all purpose seaoning,salt and pepper to taste ,,dont scimp it will cook through....shake bag to mix,, add chicken shake till coated ,no need to press,,use a wok,,about 1 centimetre deep.oil will be hot enough if flour sizzles when added. cook till golden on one side,and about 1quarter the amount on the other side..my kids think it is better than kfc,, oh for good taste and health use ricebran oil enjoy...

I always use chicken breast as a much nicer and less gamey

part of the chicken and coats much better than the chunky parts Ernie.



Put any seasoning you want into a bag and shake the (thin chicken

slices) Flatten with a bottle so it does cook right through as I know of a young girl

paralized from eating chicken not cooked properly. I also like

coated drumsticks but cook those first before coating.

You can use any herbs you want and either breadcrumbs or flour.

Less oil is best but good quality Olive Oil is good for us in not too

great amounts.

I agree with you Brianna Mrs Zapot always uses chicken tenders

she par boils them first all ways remember "pink chicken" can kill.

It is better to be sure than running to the toilet all night :-S

The better half uses bread crumbs and all spice

makes a very very nice meal.

The first thing about making tasty chicken is to marinade the chicken first. I prefer chicken thighs. In the evening I will prepare the marinade. Maybe some soy sauce, oyster sauce, some fresh grated ginger, a crushed clove of garlic, a grated onion and some olive oil and maybe just a touch of tumeric and if I want it spicy, some curry powder. Put the fairly thinly sliced chicken in, give it a stir, and leave, covered, over night. Next day, if you want a crispy batter on the chicken, take it out of the marinade, dip it in flour, then into a light batter which you have made. Have the oil hot, and don't cook too much at once - it will lose it's crispness. Serve with either a few baked vegies, or mashed potato, green beans and gravy. It's delicious, and really not too much bother.

well sorry ernie ,i am outnumberd by all the experts on fried chicken, i must say i am surprised at chicken thighs referred to as gamey,that certainley is a new one on me.i think they hold a lot more moisture during the frying process than breasts that need a lot of work hammering and slicing,,even if they do dry out..but hey i was only giving you my version .give it try ,it is up to your personal taste ..bet ya didnt expect all this knowall tripe when you asked for a recipe.

I have to admit I only ever use Tenderloins or chicken breast myself but

that is not to say those like to use chicken wings and thighs are not

equally allowed to do this. Everyone can surely have their own opinions

and recipes and perhaps Ernie can find something suits him.

oops ,,did i forget to mention ,please ,use boneless,,skinless thighs...also anyone with half a brain would make sure the chicken was thoughrally cooked. no einstein there.enjoy mate.....

This recipe is the closest I could get to Kentucky. It's for 8 so cut down accordingly.



1 1/2 cups plain flour

1 1/2 teaspoons salt

1 1/2 tsps dried thyme

1 1/2 tsps dried rosemary

1 egg beaten

1/3 cup milk

2 tablespoon lemon juice (fresh if poss) this ingredient is the key

16 chicken pieces

oil for cooking



Combine flour, salt, herbs. Mix egg and milk and lemon juice well. Coat chicken first in flour mixture, then in the egg mixture, than back into the flour mixture.



Fry in hot oil on both sides then cover and cook for about 25 minutesuntil brown and crunchy.

Anyone who eats KFC must be too lazy to cook or enjoy sitting using your hands to munch food like a monkey or just too uncouth to enjoy a proper meal in a restaurant.

Couldn't agree more, Jellybeen, re using chicken thighs....full of flavour and moisture. I feed the breast to my dog!..She likes it, and doesn't mind or notice it's dry and tasteless. LOL.
