Easy and yummy ice cream cake to make for Christmas

and birthdays and any time especially when kids visiting to eat it but we love it also.

Tub Vanilla ice cream softened. Empty into big bowl

Stir anything you want ie berries, walnuts and chocolate bits or mars bar crumbled or Violet crumble or anything takes your fancy (not pickles) :(

The trick is to use a spring form cake pan so when set hard take out carefully and decorate with grated chocolate and nuts or just about anything and slice into lots of pieces as it is nice and rich and SO good and an alternative to a sponge or fruit cake for a special occasion. Takes minutes to make.

Have a special weekend folks - not long until Santa arrives for those like me have been good.

I have tried to make ice cream cakes with Christmas pudding mix (cooked of course)and vanilla ice cream but it always kind of came out a bit of a mess. Not having children makes for being no expert with things like that I guess. What an innovation using a spring cake pan. I will have another go tomorrow as going to an afternoon tea so will take it in an esky then refrigerate/freezer section when there. I might win the prize for best cake. Thanks for that.

Sounds good to me Seggie both the Baileys and the eating it for one but would love to share with you and have a natter.

I made one a couple of Sats. ago with walnuts and a block of milk chocolate in the blender but not too fine and I use low fat ice cream (what a cop out hey?) lol Just now and again anything is o.k. though and the walnuts are very good for us.

Sent away for Collagen and also Hyaloric Acid Caps yesterday. I know what a succor for vitamins and stuff to keep the skin o.k. I am. lol. Fun hobby.

Bad Bad Phyl - I thought I would make this just to try, and then make it for Christmas. It was delicious and with the additions you all suggested, I am addicted already. I will just refer my doctor to you if he asks why I have put on weight. :-)

Just give him the recipe to try Pommy you may find he becomes very human and understanding! :)

The springform makes for such a good looking ice cream cake dosn't it :) and nice to slice.

Pommy, low fat ice cream and walnuts are good for us and a bit of choc. lifts the spirits and it is amazing how many different things can go into the softened ice cream.

I made a fruit mince one last year and will again this year and it is absolutely wonderful with nuts of course and a bit of grated choc.
