EARTH EATS: One Pot Sweet Potato Pie

This week’s Earth Eats recipe of the week is Trainer Luke’s One Pot Sweet Potato Pie!


Ingredients:

  • butter, for cooking
  • 1 brown onion, finely chopped
  • 2 garlic cloves, finely diced
  • 1 red chilli, finely chopped
  • 1 red capsicum, chopped
  • 1 kg grass-fed ground lamb
  • mince
  • ¼ cup tomato paste
  • 1 teaspoon ground cumin
  • sea salt and ground black pepper
  • ½ cup diced tomatoes
  • 2 sweet potatoes, peeled, chopped
  • and boiled
  • 2 tablespoons coconut oil
  • 1 tablespoon coconut cream
  1. Start by heating the butter in the frying pan or casserole dish you intend to serve in – make sure it’s ovenproof or flameproof. Once the butter is melted, add the onion, garlic, chilli and capsicum and stir until softened. Now add your lamb mince, tomato paste, cumin, salt and pepper. Cook well, browning the meat all over. When the meat is just cooked, stir through the diced tomatoes and turn the heat down to a simmer for 10 minutes.
  2. Now you can preheat the oven to 180°C and get cracking on your sweet potato. Put the already boiled sweet potato in a food processor with the coconut oil and coconut cream and blend until really smooth. Add some salt, pepper and butter if you wish.
  3. Once smooth, spread the sweet potato evenly over your mince and pop the pan or dish in the oven for 15 minutes or until the top starts to brown a little. Serve at the table in the pan or dish. TRY THIS: You don’t have to stick to lamb mince. We often make this with wagyu beef or kangaroo!

I am more into salads and I like my vegies steamed - to me dishes like that is ruining good sweet potato..... and if I had to eat it to be polite, I would only eat the top.

But I am sure there would be many that would like a dish like that.
