Date and walnut loaf

Made a date and walnut loaf, yesterday. It was an absolute disaster! I forgot, somehow, to put in the baking soda, so what I ended up with, was a fairly flat, crusty, date and walnut biscuit. It is edible, but really not what I expected to have. I just love getting older and more forgetful. Makes cooking a real experience!

I am looking for one and I will replace the butter (if this is what is in the recipe) for virgin olive oil

Both sound good to me please Bev. if you have time. I really am looking for a tried recipe using dates and walnuts please. I do want to use Virgin Olive oil for the fat.

I will sit here and keep watching for when you have the time as I bought the dates and walnuts in anticipation this morning.

Here goes. 8oz plain flour, 1 level tspn baking powder, 4 oz margarine, 4 oz sugar, 8 oz chopped dates, 2 oz chopped walnuts, 1 level tspn bicarb soda, 3-4 tblspns milk, 1 beaten egg. Oven 350F. Sift flour and baking soda, rub in margarine until it remembles fine breadcrumbs, Stir in sugar,dates and nuts. Make a well in the centre. Dissolve the bicarb soda in 2 tblspns of the milk and the egg. Mix into the dry ingredients adding more milk if necessary to give a stiff dropping consistence. Pour into an 8x4 loaf tin and level top. Bake in the centre of oven for 1 - 1&1;/4 hours, until firm to the touch. Hope it works for you and you can work out the mls etc instead of oz.

Thank you Bev. for your recipe and now it is one of my favourites and I have it stuck to my fridge. I am sure it will not be long before I know it off by heart and would you believe it I have a second one in the oven right now as I am cooking a roast so making use of the oven.

I did use Walnut oil as I said I would like to try (rather I said olive oil but I used walnut) and it worked well.

I'm so glad it worked for you - gave it straight out of the book. I usually put in fewer dates and more walnuts myself. It's like when some-one asks me for my recipe for fried rice. I don't do it the usual way, I never use boiled rice. I brown the rice in peanut oil, cook up most of the ingredients, then put the whole lot in a dish, add chicken stock, then let it absorb slowly in the oven. But I use a bit of this and a slight touch of that. You just have to do it as you feel it should be done.
