Custard and IceCream help!

Looking for a recipe for custard and icecream made from Nestle Carnation Creamy Evaporated Milk. Was in an old Cook Book from Nestle Milk some years ago but with shifting and down sizing the book has got lost.

I have also been after the recipe for the ice cream I used to make way back--used to have to make it --half freeze it and beat again--can't even remember the indigents

[b]Carnation Milk Ice-Cream

Ingredients

2 cans evaporated milk

1 cup sugar

2 teaspoons vanilla

1 pinch salt

2 teaspoons gelatin (dissolved in 1/4 cup very warm water and allow to stand until mixture is clear)

Directions

Beat salt, vanilla and milk at medium to fast speed until ingredients triple in bulk.

Gradually while still beating add sugar followed by gelatine.

Place in container and freeze for several hours stirring occasionally.

Thanks Sandy--I don't remember that one and the one that I sued to make--you beat it and put it in the freezer till it was part forzen and then beat it till it doubled in size--don't remember the gelatine either--bt will give that a try--thanks again.

[b]Plan B maybe this one will be more like the one you wanted. I got that one off the web but this one I had in an old carnation book.



I thought I had another Carnation book but like you with moving I lost a lot of my recipes over the years. That's why I am now putting all my recipes onto disc so that I can pass them on to my daughters



CHOCOLATE ICE CREAM.

375 ml Carnation Evaporated Milk, icy cold

1/2 cup chocolate topping

1 teaspoon vanilla

100grms chocolate grated.





1 Whip milk until double in volume.



2 Add 1/4 cup chocolate topping and vanilla



3 Pour into plastic freezer container with lid and freeze.



This is the only Carnation Custard one I have but you could adapt it to a plain custard[/b]



[b]BUTTERSCOTCH CUSTARD[/b]



[b]1/2 cup sugar

2 tbs butter

375 ml Carnation Evaporated Milk

1 Tbs. custard powder (blended with a little bit of CE milk.



1 Place sugar and butter in a small saucepan. Stir until caramelized, approx. 2 mins.



2 Add CE Milk. Stir over low heat until sugar dissolves.



3 Add custard powder, heat until thickened[/b][size=4][/size]

Thanks Sandy--this one I had was just plain vanilla--although I did add some passionfruit from time to time--I used to make it in the late 50s and early 60s it had no custard powder--but will keep all of the ones to try
