Beyond easy "no fat cake" yummy.

I have an unbelievably easy Five-Cup Cake

1 cup SR flour
1 cup dessicated coconut
1 cup milk
1 cup sugar
1 cup tinned apricots (use any fruit you prefer)

Method:-
Mix all the ingredients together, in any order, then bake at 180C for about 40 minutes.

I have made this cake with different fruits. Peter and I love Raspberries.
even Blueberries (great antioxident) apple is nice also.
No fat no eggs - cheap but great.........................:)

Almost sounds to good to be true Phyl but I will

go buy some coconut now and have a go at it and even will

cut the sugar to 3/4 of a cup as I always do with any cake I make

and never makes any difference. Always looking for sweets

Thanks Phyl,here's another one,

In a bowl put ; 500g mixed fruit.

1cup Brown Sugar.

1 cup strong black tea.

Let cool .

Add 1 Beaten egg.

2 cups S.R.Flour.

1 Teasp. Mixed Spice.



Round tin, 160` 1hr 15 min.approx. Test with skewer.

Serve buttered.

Have to be honest here although you two sound like you have

made these cakes to me no butter or eggs a cake

does not make.

I will bow down to you both if they come out o.k. though and be grateful

for the recipes as husband now has high cholesterol so I have to change my

ways re cooking. Not really happy about it though.

Will certainly make yours also Tweety.

Meant to say ,of course without fat it wont keep as well as some, but it never gets that far in our house anyway.
