Beaut Fruit Cake - simply made - simply devine.

you will not believe this if you had a problem believing Zapped Chook.

the best Fruit Cake you have ever tasted and it is so simple it sounds impossible.

750g Mixed Fruit (less expensive brand)
600 ml Chocolate or coffee flavored milk (just milk and instant coffee)
2 cups Self Raising Flour (less expensive brand)

that's all - not another thing to add - but how you ask - simple.

Put mixed fruit into bowl and mix in flavored milk
rest this in refrigerator overnight.
add flour next morning
grease and line a can - add mixture and bake in a preheated oven 180 degrees or 160 fan forced for 1 hour.


bet you could not believe this - no eggs - no butter - no sugar- no essence

lets all know what you think - i love fruit cake and cook this in the caravan all the time.

please try the chook - it is really good.



for some people just cooking for themselves would love a fruitcake but the usual recipes are so expensive and not worth risking a flop.



this one is so simple that really nothing can go wrong ---"touch wood" ------- and for simple folk like us and our friends it is really beaut . - well worth sharing with our friends on this site.



i feel the same about the chook - cooked this way it reduces the cleanup usually associated when we roast a chook and it is so quick - the size is the key to the time and different stock powder mixed with corn flour is cheap as well.

Peter re the Fruit cake what size tin did you cook it in

PlanB i use a tin - 21cm square



i grease the can and also ilne with baking paper

I posted an answer in to you Jane an hour ago and just thought it went in, but as is happening to me over and over it did not go in and I answered the phone and did not re-check.

I used a 9 inch or 23cm square pan sprayed and also with baking paper on the bottom,

so it makes a lovely big cake. I often make a cake and when cold ice it and slice into serving sizes and wrap individually in lunch wrap and then into a freezer bag so can take one or two slices out any time we feel like a slice. Good when cooking such a big cake for one.

You will enjoy it as it is a lovely moist fruit cake. I made up less than an ounce of VERY strong coffee and added it to the quantity of milk Jane.

Peter I did answer and say we cooked the chook in the microwave (Very handy as our new stove was not connected) and it sure 'nuff was tasty and I have another for the weekend.

4 tablespoons sr flour

4 tablespoons sugar

2 tablespoons cocoa

1 egg

3 tablespoons milk

3 tablespoons chocolate chips (not really necessary)

3 tablespoons oil ( not from the truck)

just a splash of vanilla.





just mix everything together and split between two greased coffee mugs( not metal)



put in microwave 1000 w 3 mins - test with straw



will be very hot - allow to cool



for me a lot more mucking around but it is good. only one bowl to wash - the mugs are cleaned by the next cup of coffee.

How beautiful my house smells this morning as I have a beautiful Peter S. cake almost ready to take from the oven and leave to cool ready for cutting and eating....

I just love this easy recipe Peter S.

I have made SO many with Peter's recipe and we just love them. The last two I have used 600 ml of Prune Juice and also 250grams of chopped prunes as part of the mixed fruit and because we love our walnuts 250grams just as an extra chopped (yes an expensive cake but as I have to take 3 Panadeine Forte every day for migraines it is a miracle cake for me)

So moist and rich. No changes required with Peter's recipe (just that for me the prune juice and prunes are very good) maybe help others.

btw Peter the choc. cake in a mug is terrific as a tasty treat and very quick and easy.

***** Peter, we now make your "chocolate cake in a mug" often, as it is delicious and quick and very yummy. Mugs straight into the dish washer and nothing to wash - Almost as good as your easy peasy fruit cake - nah nothing can top that :)

Hi Peter, I haven,t been in to meeting place lately but picked up on your fruit cake. I tell you I am a professional cook and have been around for quite awhile with lots of short cut recipes ,I couldn,t wait to try your fruit cake and let me tell you it has a mark of ten out of ten . Well done and it shows that there is always something knew that you can learn. Thankyou Peter very much, have already passed it on to friends and bowling club members.
