Baked fish cakes.

For four people.

Cook by boiling about 6-8 large potatoes the mash them and let them cool.

Chop up fine some raw fish of any kind or use tinned tuna or salmon. Finely chop an onion plus chives and parsley. ( If using tinned fish cook the onion in the micro for a while).Add this to the potatoes plus salt and pepper.

Separate 3-4 eggs and put yolks into mixture and blend through.

Whip the whites until stiff and fold through the rest gently.

Spoon out onto a greased tray into 8 piles and sprinkle some parmesan grated cheese onto the tops.

Bake for about 30- 40 mins in a 200c moderate oven. Fan forced ovens will need less time. Just get the tops crispy.

Face value   will make it next week - would have yesterday for Good Friday but not to worry Tuesday I will.

 

Oh Come on ...I would not mess with stuff like this.

We had them yesterday and they were really yummy. Bit of a waste of good flake though.

I have all the ingredients ready to make them tomorrow night when we get home. I will just make white sauce with parsley and not bother with veg. I even have the potatoes cooked and ready to go as will not feel like doing much after the day at the hospital with Peter.

Like the idea of Parmesan cheese ( bought to have ready) and crispy top.

I look forward to hearing how it all went.

Are you alright after fish cakes?

Tried the fish cakes over Easter Davey, separated three eggs and ended up with 9 fishcakes about as big as a rockcake, as light as air.  Although a great success, thought they were a bit bland so I smothered mine in tomato sauce.

Maybe some more seasoning or some herbs like traragon.

Or a parsley sauce like Phyl was going to try...most people would add their own likes to it .

I have made the fish cakes twice  once with white fish I defrosted (of course)

and second time with a tin of Aldi red salmon and both times with white sauce with parsley (because Peter loves it) and both times we really did enjoy them and will certainly make them often.

p.s. because Davey deserves his bum smacked for being rude often!!! I was not as hopeful of the fish cakes being really nice but I was mistaken so credit where credit is due. Really worth having as a good easy and tasty standby meal.

Good idea Phil, will do the parsley sauce next time.  That reminds me of the French chef on My Kitchen Rules, he always said "Where's the sauce?" - I'm a bit like that, it will make them even more delicious.
