Allergic to gluten & lactose - HELP!

My wife is allergic to gluten & lactose and must limit her intake of amines and fats. Since I retired 17 years ago, I have done all the cooking; but for the past two years, since my wife’s “allergies” surfaced, I have found it difficult to prepare her suitable meals without giving her the same fare day after day (e.g., for dessert - lactose free yoghurt with fresh strawberries or cherries 7 nights a week). I have bought a number of special cookery books and “surfed” the web to find suitable recipes but seldom locate one which fully meets her requirements. Can anyone help with some appropriate recipes that will permit me to plan meals which allow more variety in her food intake.

Geoff, I believe sourdough bread re-structures (there might be a better word) gluten. Because it is very healthy for everybody I tried to make some myself. You need a starter batch in the beginning but after that it is fun.
